Mango Coconut Popsicles

Summer may be coming to the end, but we are soaking up every ounce of the sunshine we have left. That means if your looking for us, you can find us outside by the lake, probably with a mojito in one hand and a popsicle in the other. But don’t worry if you don’t have a lot of sunshine where you live because these Mango Coconut Popsicles will deliver the rays wherever you are.

Seriously, we talk about in like every blog post. I think most underestimate the deliciousness of a homemade popsicle. It can actually be quite impressive to make a delicious and well balanced popsicle. Plus who doesn’t want a refreshing popsicle for dessert on a hot summer day.

These Mango Coconut Popsicles are super easy to make the refreshing treat you need right now. Simple, yet delicious ingredients make this recipe shine. With just the use of your blender and a popsicle mould you have the most delicious treat.

Mango Coconut Popsicles

Ingredients

Mango Puree

  • 2 large mangoes
  • 2 limes, , juiced

Coconut Milk Layer

  • 1 can coconut milk
  • 1 tsp vanilla extract
  • 1 tbsp maple syrup

Instructions

  • Peel and roughly chop your mangoes. Add your mango pieces and lime juice to a blender and blend until smooth. 
  • In a bowl combine your coconut milk, vanilla extract, and maple syrup and mix until combined. 
  • Alternate pouring each into your popsicle moulds to create your desired look. We used a bamboo skewer to mix and get a swirl effect. 
  • Freeze for at least 6 hours or overnight.
