Ingredients
3/4cupbrown sugar
1/2cupcoconut oil
1tspvanilla extract
1/4cupnon-dairy milk
1flax egg(1 tbsp ground flax + 3 tbsp water)
2cupsall-purpose flour
2tspbaking powder
pinchsalt
1/8cupvegan sprinkles(optional)
Instructions
Preheat oven to 375F.
Prepare your flax egg and let sit for about 10 minutes.
To a stand mixer add your coconut oil and brown sugar and cream together. Add your vanilla and non-dairy milk and beat until just incorporated.
Add your flax egg to your wet mixture and beat.
In a separate mixing bowl whisk together your flour, baking powder, and salt.
Slowly add your dry mixture to your wet mixture while beating. Once all your flour is in there, beat until just combined.
Add in your sprinkles and fold them in by hand or using a spatula.
Roll your dough into balls and place them on a lined baking sheet about two inches apart. Using a flat surface squish down your dough balls into a disk about 1/2 inch thick.
Bake for 12-14 minutes or until the bottom is nice and golden brown.
