Welcome to January 2018! Can you believe it is already 2018!? How did that happen? Anyway, welcome to the first blog post of the new year. When a new year rolls around most people often make these little things called resolutions. Have you heard of them? They’re those things people set for themselves and often give up on within a few weeks. Well this year is different. This year we are sticking to them. We hope you join us on this ride.
When making resolutions people often set them for at least one of three things: health, money or adventure/lifestyle. We’re here to help you tackle at least two of those three with our new series, Go Vegan, Not Broke. That’s right we are here to show you how you can be vegan and not spend all your money. It is actually a lot easier than you would think. One of the main things to remember is to avoid the aisles in your grocery store. Stick to produce as much as you can and you will end up saving money. It’s the processed stuff in the aisles that run up your grocery bill. That is why you will notice a lot of fruits, vegetables and grains in this month’s recipes.
The first recipe up is oatmeal (obviously we are starting with breakfast). This recipe is amazingly quick and simple, yet packed full of flavour. The caramelized banana adds the perfect amount of sweetness with every bite. Plus it seriously makes this dish look way fancier than it actually is. Each of the recipes will serve at least 4 people, however you may notice that this one only serves 2. That’s because this is only the first part of today’s recipes! The total cost for our breakfast oatmeal with carmelized banana came to approximately $1.81 CAD making it an awesomely cheap $0.91 per serving! If you are looking for something cheap to eat that still tastes amazing, this is the dish.
Ingredients
- 1 1/2 cups rolled oats
- 3 cups water, divided
- 1 tsp cinnamon
- 1 tsp nutmeg
- 1 banana
- 1 tbsp brown sugar
- 1 tsp coconut oil
- 1/4 cup pecans
Instructions
- Prep your pecans by roughly chopping them and set aside.
- In a medium pot add your oats, cinnamon and nutmeg and mix together. Add 2 cups of water and set on medium to high heat. Conistently stir until most of the water has been absorbed. Depending on your oats you may need to add more water, give the oats a quick taste and if they are still a little tough add more water (up to 1 cup extra).
- Add your oatmeal to bowls and set aside to make your carmelized banana. Cut your banana in half length wise and then again in half again. Add your brown sugar to a bowl and coat your banana pieces in it.Add your coconut oil to a small pan on medium heat. Once melted add your banana pieces and cook on all sides until nice and carmelized.
- Add your carmelized banana on top of your oatmeal and sprinkle with the chopped pecans and enjoy!
