Top tips for making easy Vegan Almond Tarts:

  • Get vegan puff pastry. It’s not always easy to come by depending on where you live but it’s out there. Avoid ingredients like milk, lard, and others. Pro tip: Find one that comes in sheets and doesn’t need to be rolled out.
  • Let puff pastry rest in fridge overnight. There is a bit of pre-planning required to ensure the puff pastry is thawed and pliable before you start the recipe.
  • Bake until deep golden brown. Many underbake puff pastry. You’re looking for a deep golden brown all over to ensure it’s baked throughouly.
  • Top with icing sugar. Don’t be a afraid to really top with icing sugar – that gives it the perfectly sweet bite!

Ingredient Notes:

  • Puff Pastry – Vegan puff pastry is available and in Canada can be found at most large grocery stores. We like the 7 Days Bake it Puff Pastry brand.
  • Vegan Butter – Our go-to is Becel’s Plant Based Sticks but any vegan butter substitute should work.
  • Granulated Sugar – In Canada most granulated sugar is vegan-friendly. However if outside of Canada and this is important to you, be sure to look up which brands are vegan-friendly.
  • Non-Dairy Milk – Any non-dairy milk will work, however almond milk is best to compliment the flavour.
  • Almond Flour – If you don’t have almond flour, you can also blend blanched almonds into a fine powder.

Ingredients

Vegan Frangipane

  • 50 g (¼ cup) granulated sugar
  • 35 g vegan butter, melted
  • 20 g all-purpose flour
  • ½ tbsp cornstarch
  • 40 mL non-dairy milk
  • 90 g almond flour
  • ¼ tsp baking powder
  • ½ tsp almond extract
  • ½ tsp vanilla extract

Puff Pastry Tarts

  • 1 sheet vegan puff pastry
  • sliced almonds, for topping
  • icing sugar, for topping

Instructions

  • Preheat oven to 400℉ and line a baking sheet with parchment paper or a silicone baking mat.

To make frangipane:

  • Combine granulated sugar and melted vegan butter in a bowl and mix until combined. Stir in all-purpose flour and cornstarch, then mix in almond milk, almond flour, baking powder, vanilla extract, and almond extract. Store in the fridge until ready to use.

To make almond croissant tarts:

  • Cut puff pastry sheet into 6 even rectangles and place on the prepared baking sheet evenly spaced apart.
  • Spread 2-3 tbsp of frangipane on each puff pastry rectangle, from one corner to the opposite corner diagonal from it.
  • Take the other two corners and fold them over to meet in the middle over the frangipane.
  • (Optional) Brush with a vegan egg wash or additional almond milk or melted vegan butter. Sprinkle with sliced almonds.
  • Sprinkle with sliced almonds.
  • Bake in heated oven for 18-20 minutes or until golden brown.
  • Transfer to a wire rack to cool. Once cool, sprinkle with icing sugar.
