Avocado Toast 3 Ways

Would we even be vegans if we didn’t have an avocado toast recipe on our blog? It’s taken us almost three years, but it’s finally here. However we didn’t give you one recipe, instead we’re giving you Avocado Toast 3 Ways. All delicious, all vegan.

So what makes a good avocado toast? Firstly there’s the bread. You want something hearty and delicious, but it also needs to have good structure so it doesn’t get soggy. We typically like a thick-cut sourdough bread, but for these recipes we’re using our favourite store-bought sliced bread; Silverhills. Next we’ve got the avocado. Timing the perfect avocado is truly an art. In our experience you want your avocado to be a deep green, slightly soft to the touch and top step should have fallen out on it’s own. Then you pray it doesn’t have a big pit. Lastly the toppings. This is where things can get interesting.

From savoury to sweet, these three avocado toast options will get you through the day satisfying all your avocado cravings. Whether it’s for the healthy fats or simply the delicious taste.

For our first recipe, we opted for a Greek-style toast featuring balsamic glaze, vegan feta cheese and a cucumber and tomato medley. Check out the full recipe and video below.

Greek Avocado Toast

Ingredients

  • 2 slices toast
  • 1 ripe avocado
  • 2 tbsp vegan feta cheese
  • 2 tbsp (25 g) diced cucumber
  • 2 tbsp (25 g) diced tomato
  • balsamic glaze, to taste

Instructions

  • Using a fork mash avocado on toast as generously as desired. Top with cucumber, tomatoes and feta cheese. Drizzle balsamic glaze to taste. Serve.

For the second recipe we used one of our favourite flavour profiles, tex mex. Featuring sauteed mushrooms, corn salsa and of course cilantro. Check out the full recipe and video below.

Tex Mex Avocado Toast

Ingredients

  • 2 slices toast
  • 1 ripe avocado
  • 1 (20 g) jalapeno, seeded and diced
  • 2 tbsp (20 g) cooked corn
  • 1 tsp lime juice

Sauteed Mushrooms

  • 3 (40 g) cremini mushrooms, sliced
  • 1/2 tsp cumin
  • 1/4 tsp cayenne
  • 1/2 tsp garlic powder
  • 1/2 tsp onion powder

Instructions

  • Combine jalapeno, corn and lime juice in a bowl and mix until incorporated. Set aside.
  • To a small pan on medium heat add sliced mushrooms with a little bit of water and place lid on until mushrooms are soft. Add in spices and cook another 1-2 minutes. Remove from heat.
  • Mash avocado onto toast slices and top with mushrooms and jalapeno corn salad. Finally drizzle with optional sriracha.

Lastly we brought out our sweet tooth. Yes, dessert avocado toast featuring a chocolate avocado spread, fresh banana slices and a drizzle of nut butter. Check out the full recipe and video below.

Chocolate Nut Butter Avocado Toast

Ingredients

  • 2 slices toast
  • 1 ripe avocado
  • 1 tsp cacao powder
  • 1 tsp maple syrup
  • 1 tsp non-dairy milk
  • 1 banana, sliced

Chocolate Sauce

  • 2 tbsp chocolate chips
  • 1 tsp non-dairy milk

Nut Butter Drizzle

  • 2 tbsp nut butter of choice
  • 1 tsp non-dairy milk

Instructions

  • In a small bowl mash the avocado with cacao powder, maple syrup and non-dairy milk. Mix until creamy and smooth. Set aside.
  • In a small bowl add the chocolate chips and microwave until just melted. Add non-dairy milk and mix until smooth. Set aside.
  • In a separate bowl add nut butter and microwave until softened. Add non-dairy milk and mix until smooth.
  • Spread chocolate avocado spread on toast, top with sliced banana and drizzle with chocolate sauce and nut butter. Enjoy!
