Mother’s Day is around the corner and we’re officially calling it. Mother’s Day is the brunch holiday. There’s just something about letting mom relax in the morning while you cook her a delicious feast that just feels right. Treat mom to the brunch she deserves with our Blender Banana Oat Waffles with caramelized onions.

Waffles are our favourite breakfast. They’re fluffy, yet crispy and the perfect vessel for delicious toppings. We cannot wait to share this beautiful stack of crispy Banana Oat Waffles! They’re filled with wholesome ingredients and one of the easiest breakfasts you could make. They’re accidentally gluten-free, refined sugar free, dairy-free and flour-free. Just add all your ingredients to a high-speed blender and blend until smooth. Yep, these waffles can be made in a single blender and a waffle iron. Which means there are very few dishes to clean! We love when clean up is a breeze. Then you just pour the batter into your waffle iron and cook until golden brown and crispy.

Then you top with some caramelized banana and a handful of toppings of choice like granola, fresh fruit, maple syrup and nut butter.

How do you caramelize bananas?

Caramelizing bananas is actually super easy and can take your brunch to a whole new level. Slice your bananas, coat in your choice of sugar (like coconut or brown sugar) and fry in a little bit of oil on medium heat. You want to keep an eye on them while cooking them because they will caramelize quickly and burnt sugar is not a good look. Once golden on both sides your caramelized bananas are done! Be careful when removed your bananas from the pan, as melted sugar is VERY hot to the touch.

What can be substituted?

Certain ingredients are hard to come by right now, so don’t worry if you don’t have everything. See below for the a list of substitutions that should be okay for this recipe. Please keep in mind that this recipe was only tested the way its been posted so we cannot guarantee that the flavour and texture will be exactly the same.

  • Pecans – The pecans in this recipe are not just here for flavour, but also in place of flour – replace these with any other nut or seed of your choice. If you choose to not have an additional nutty flavour, you can replace this with more oats or flour.
  • Oats – The oats in this recipe allow it to be gluten-free, but if that’s not a concern you can substitute with all purpose flour or whole wheat flour.
  • Maple Syrup – We’d never replace maple syrup in a recipe, but understand that it can be an expensive ingredient. You can substitute this with any liquid sweetener like agave nectar.
  • Bananas – If you’re not looking to have banana waffles you can substitute with another fruit puree like pumpkin puree or apple puree.

Ingredients

Waffle Batter:

  • 187 g (2 cups) gluten-free old-fashioned oats
  • 70 g (1/2 cup) pecans
  • 360 mL (1 1/2 cups) non-dairy milk
  • 1 tsp maple extract
  • 215 g (2 medium) bananas
  • 1 tsp cinnamon
  • 1 tsp nutmeg
  • 1/2 tsp all spice
  • 1 tsp baking powder
  • 1 tbsp maple syrup

Caramelized Bananas:

  • 105 g (1 medium) banana, sliced on the bias
  • 2 tbsp brown sugar
  • 1 tbsp coconut oil

Optional Toppings:

  • granola
  • nut butter
  • fruit
  • maple syrup

Instructions

  • To a blender all the waffle batter ingredients and blend until smooth.
  • Preheat waffle iron to medium-high heat and spray with cooking spray if needed.
  • Pour in about 1/4 of the batter per waffle. Cook in the waffle iron for 8-10 minutes or until golden and crispy. Repeat for all waffles.
  • To make the caramelized bananas: Add coconut oil to a non-stick pan on medium heat. Coat banana slices in sugar and place in hot pan. Cook on each side for about 2-3 minutes or until golden.
  • Serve waffles topped with the caramelized bananas and toppings of your choice.
