Loaded Mediterranean Fries

Fries are the perfect food. They’re crispy on the outside and perfectly fluffy on the inside. This recipe was inspired by every Canadian’s favourite food, poutine! Poutine is essentially fries loaded with gravy and cheese curds, we just replaced them with some fresh veggies and tzatziki. These Loaded Mediterranean Fries are perfect for lunch as their both comfort food and light from the toppings.

These are one half of our Loaded Fries challenge. For this recipe Kat wanted something different. She wanted something different than we normally do.

Start off with some crispy fries. We used frozen fries as that’s what we had and popped them into an air fryer to crisp up without any extra oil. The perfect pillows of fries were then topped with crisp lettuce, a fresh veggie salad, roasted crumbled falafel and vegan tzatziki. The perfect combination and balance of flavours – plus it kind of feels like your eating something healthy. It’s basically a Greek salad, except with fries instead of lettuce.

Ingredients

  • 500 g fresh or frozen fries

Marinated Vegetable Salad

  • 1/3 cup (70 g) cucumbers, diced
  • 1/3 cup (70 g) tomatoes, diced
  • 1/3 cup (70 g) carrots, diced
  • 1/4 cup (5 g) parsley, roughly chopped
  • 1 tbsp (15 mL) oil
  • 1 tbsp (15 mL) lemon juice
  • pinch salt
  • pinch black pepper

Tzatziki Sauce

  • 1/4 cup (60 g) soy yogurt
  • 1/6 cup (30 g) cucumber
  • 1 tbsp fresh parsley
  • 1 tbsp fresh dill
  • 1 tbsp (15 mL) lemon juice

Toppings

  • 1/2 cup (45 g) green leaf lettuce, shredded
  • 8 (160 g) falafel balls, (we used Yves brand)

Instructions

  • Cook the fries according to instructions on package or pop them in an air fryer on 400F for 30-35 minutes or until golden and crispy. 
  • To make the marinated vegetable salad combine the carrots, tomatoes, cucumber, parsley, oil and lemon juice. Toss to coat. Sprinkle with some salt and pepper to taste. Set aside. 
  • To a food processor combine tzatziki sauce ingredients and blitz until combined. You still want some chunks in the sauce. If you don't have a food processor you can do it by hand by finely dicing the cucumber, parsley and dill. Then just combine all the ingredients in a bowl and mix. Set aside.
  • Preheat a non-stick pan on medium heat. Crumble falafel into the pan and toast until golden brown, it should take about 5-7 minutes. Be sure to keep the crumble moving to avoid burning. 
  • Now time to construct! Place the crispy fries in a large bowl, top with lettuce, crumble, vegetable salad and a dollop of tzatziki.
