Almond Butter and Jam Cookies

Everyone’s favourite childhood sandwich, except cookies; Almond Butter and Jam Cookies.  

The busier we get the more we’re looking to cut back some time in the kitchen. As much as we love cooking – we just don’t have time to spend hours in the kitchen everyday. When this happens we start dropping prep time and sometimes entire meals. The first meal to go is typically dessert – and yes we do consider dessert a meal. However instead of dropping any meals we suggest finding quick and easy ways to enjoy them.

When it comes to dessert; quick cook time, one-bowl and batch recipes do wonders to save time. These Almond Butter and Jam Cookies are not only one of these things but ALL THREE. You read that right. With just five ingredients and one bowl, these cookies are the perfect weeknight dessert when you’re craving something sweet.

All you have to do is combine all the ingredients, except the jam, in a bowl and mix until combined. Scoop onto a lined baking sheet and using your spoon create an indent into the cookie – fill with your favourite jam and bake! Dessert is as easy as that.

The minimalist ingredients also make these great for breakfast alongside a cup of tea or coffee.  Customize this recipe with your own jam and nut or seed butter flavour. Try adding some coconut or extracts to change up the flavour profile. Check out our full recipe and video below.

Peanut Butter and Jam Cookies

Ingredients

  • 3 tbsp smooth almond butter
  • 1/4 cup almond milk
  • 1/8 cup rolled oats
  • 2 tbsp chocolate chips
  • 4 tsp jam, , of choice

Instructions

  • Preheat oven to 400F.
  • To a bowl combine peanut butter, almond milk, rolled oats and chocolate chips.
  • Scoop dough onto a lined baking sheet and using a spoon or cookie scoop create a slope in the center of the cookie. Spoon in 1 tsp of the jam into each cookie.
  • Bake for 15 minutes. Allow to rest about 5 minutes before serving.
