Ingredients
60mL(¼ cup) avocado oilor other oil of choice
45mL(3 tbsp) red wine vinegar
5g(1 tsp) dijon mustard
4clovesgarlicminced
1tspcayenne powder
2tsphot chili powder
1tbspsmoked paprika
2tspdried oregano
2lemonsjuiced
salt and pepperto taste
1blockSunrise Extra Firm Tofu
Instructions
To a bowl add avocado oil, red wine vinegar, dijon mustard, minced garlic, cayenne powder, hot chili powder, smoked paprika, dried oregano, lemon juice, salt, and pepper. Stir until combined and smooth.
Cut the tofu into ½" cubes and add to the marinade. Toss until each tofu cube is coated in marinade. Let it rest in the marinade for at least 20 minutes, but longer if you have the time.
Preheat oven to 400°F.
On a lined baking sheet, place marinated tofu cubes with about a ½" between each piece. Bake for 20 minutes until crispy, and another 5 minutes if you want it even crispier.
