Ingredients
Home Fries:
535gyellow potatoescubed
1tbsp(1 tbsp) steak spice seasoning
15mL(1 tbsp) oil
Tofu Scramble:
400g(1 block) extra firm tofu
3g(2 tsp) nutritional yeast
5g(2 tsp) chili lime powder*
5g(2 tsp) steak spice seasoning
22mL(1½ tbsp) oil
3g(1 tsp) turmeric
1g(¼ tsp) black salt
1mL(¼ tsp) liquid smoke
Add-ins (optional):
spinachto taste
cremini mushroomsto taste
cherry tomatoesto taste
Instructions
Peel and dice potatoes into small cubes. Add to a bowl and drizzle with oil to coat. Sprinkle on steak spice and toss until evenly coated.
Cook the prepped potatoes in air fryer at 360°F for 20 minutes with rotating paddle in or tossing the potatoes halfway through if your air fryer doesn't have a paddle.
In a small bowl, mix together oil, liquid smoke, nutritional yeast, chili lime powder, steak spice, turmeric, and black salt. Stir to combine.
Crumble the tofu into a large bowl and pour the seasoning mixture on top, tossing until it’s all evenly coated.
Once the potatoes are cooked, add in the crumbled tofu. Cook for another 10 minutes, tossing halfway through if your air fryer doesn’t have a paddle. Once the potatoes are golden brown and crispy, the scramble is done.
We're serving with some sautéed spinach with roasted tomatoes and mushrooms. But you can serve as is or with whatever other ingredients you want.
