Ingredients
Oatmeal Base & Topping
240g(2 cups) all-purpose flour
4g(1 tsp) cinnamon
144g(1 ½ cups) old-fashioned oats
100g(½ cup) white sugar
100g(½ cup) brown sugar
226g(1 cup) vegan butter melted
1flax egg(1 tbsp ground flaxseed + 3 tbsp water)
Berry Layer
450g(3 ½ cups) frozen mixed berries
50g(¼ cup) granulated sugar
30mL(2 tbsp) lemon juice
40g(4 tbsp) cornstarch
26g(2 tbsp) chia seeds
Instructions
Preheat the oven to 350°F degrees.
Line a 9x9 inch pan with parchment paper leaving an overhang around all the edges. Set aside.
Add all-purpose flour, cinnamon, rolled oats, and both sugars to a large bowl and mix to combine. Stir in the melted butter and flax egg – the mixture should look like wet sand.
Reserve about 2/5 of the oat mixture for the topping, then press the rest into the bottom of the prepared pan. Use the bottom of a measuring cup to press it as firmly as you can. Set aside.
Toss together the mixed berries, granulated sugar, lemon juice, chia seeds, and cornstarch in a large bowl. All the berries should be evenly coated.
Spoon the berry mixture over top of the base, don't worry if it seems thick, as it cooks it will compress into a jam-y layer.
Crumble the remaining oat mixture over top and pressing gently on top of the berry mixture. It's okay if the topping doesn't completely cover the berries, you want some peeking through!
Bake in the preheated oven for 45-50 minutes, or until the top is golden brown and the berry mixture is bubbling.
Cool the pan on a wire rack for 30 minutes. Then remove baked bars from the pan and transfer to the fridge to cool completely.
Once it's completely cooled, slice into 9 or 16 squares. Store in an airtight container for up to 4 days.
