Prep your pecans by roughly chopping them and set aside.
In a medium pot add your oats, cinnamon and nutmeg and mix together. Add 2 cups of water and set on medium to high heat. Conistently stir until most of the water has been absorbed. Depending on your oats you may need to add more water, give the oats a quick taste and if they are still a little tough add more water (up to 1 cup extra).
Add your oatmeal to bowls and set aside to make your carmelized banana. Cut your banana in half length wise and then again in half again. Add your brown sugar to a bowl and coat your banana pieces in it.Add your coconut oil to a small pan on medium heat. Once melted add your banana pieces and cook on all sides until nice and carmelized.
Add your carmelized banana on top of your oatmeal and sprinkle with the chopped pecans and enjoy!
