With a sharp knife finely dice all your mango, cherry tomatoes, red onion, cilantro and red bell pepper. We prefer fairly small pieces as it makes it more scoopable. Add all your chopped ingredients to a medium bowl.
Slice your jalapeno in half and remove the insides and seeds. If you wish you can leave some in for a spicier dip. Finely dice the jalapeno and add to your bowl.
Add lime zest and juice and mix until well coated.
