Cook the fries according to instructions on package or pop them in an air fryer on 400F for 30-35 minutes or until golden and crispy.
To make the marinated vegetable salad combine the carrots, tomatoes, cucumber, parsley, oil and lemon juice. Toss to coat. Sprinkle with some salt and pepper to taste. Set aside.
To a food processor combine tzatziki sauce ingredients and blitz until combined. You still want some chunks in the sauce. If you don't have a food processor you can do it by hand by finely dicing the cucumber, parsley and dill. Then just combine all the ingredients in a bowl and mix. Set aside.
Preheat a non-stick pan on medium heat. Crumble falafel into the pan and toast until golden brown, it should take about 5-7 minutes. Be sure to keep the crumble moving to avoid burning.
Now time to construct! Place the crispy fries in a large bowl, top with lettuce, crumble, vegetable salad and a dollop of tzatziki.
