Rich smoky flavour paired with a crisp, sweet apple – this Apple and Smoked Tofu Sandwich is without a doubt our go-to fall sandwich.
Before eating more plant-based, I used to love a turkey and apple sandwich. They’d be a lunch go-to during my university days. I haven’t eaten turkey in over a decade but that doesn’t mean we can’t enjoy similar flavours. Smoked tofu is the perfect swap for turkey, its has a light smokiness and when thinly sliced they both have a very similar texture.
To make this Apple and Smoked Tofu Sandwich perfect the key is to slice the smoked tofu as thinly as possible – we like to use a vegetable peeler. You could also just use a sharp chef’s knife. The perfect balance of flavours this sandwich is finished with thinly sliced apple, maple mustard, eggless mayo, cheddar cheese, and arugula.

How to make the best apple and smoked tofu sandwich:
- Use good sourdough. Sandwiches start with the bread and we always think that’s worth a splurge. Get yourself to a local bakery and pick up a nice loaf of sourdough bread.
- Thinly sliced smoked tofu is key. For the best, most similar experience to deli turkey the key is to slice the smoked tofu as thinly as you can. To do this we like to use a vegetable peeler or a very sharp knife.
- Pile the fillings high. For the best bite bite we load each ingredient onto the sandwich in a thick layer.

Ingredient Notes:
- Smoked Tofu – This recipe calls for smoked tofu, we use the Sunrise brand, but if you only have access to regular extra firm tofu we’d recommend marinating and pan frying some thinly sliced tofu.
- Apple – We use Granny Smith for the flavour and crisp texture, but you can use whatever your favourite snacking apple is.
- Sourdough Bread – This recipe is best made with some good local sourdough bread. If you’re in the GTA or Hamilton area we love Dear Grain. But really any sourdough bread or other bread will do.
- Maple Mustard – Like honey mustard, expect made with maple syrup instead. We simply make this by combining yellow mustard and maple syrup.
- Arugula – We like this recipe best with arugula, but we’ve also made with with kale and it’s also delicious.
- Cheddar Cheese – We use the Daiya cheddar block and thinly slice but whatever your favourite vegan cheddar cheese is will work.

How to make a Smoked Tofu & Apple Sandwich:
Smoked Tofu and Apple Sandwich
Ingredients
- 2 slices sourdough bread
- 60 g smoked tofu
- ½ cup arugula
- 1 small granny smith apple
- 40 g (or 1-2 slices) vegan cheddar cheese, thinly sliced
- 2 tbsp vegan mayo
- 1 tbsp yellow mustard
- 1 tsp maple syrup
Instructions
- Using a vegetable peeler, thinly slice the smoked tofu. Set aside.
- Mix together the yellow mustard and maple syrup. Set aside.
- Thinly slice the Granny Smith apple. Set aside.
- Toast the sourdough bread then spread mayo on one slice and the maple mustard on the other. Then layer on the sliced smoked tofu, cheddar cheese, Granny Smith apple, and arugula. Press the top slice of bread gently down and slice in half to serve.
