Ingredients
Bean Salad:
1cancannellini beans
1cannavy beans
75g(½) red onionfinely diced
120g(½ pint) cherry tomatoeshalved
25g(½ cup) fresh parsleyfinely minced
25g(½ cup) fresh dillfinely minced
Dressing:
60mL(¼ cup) olive oil
1lemonjuiced
10mL(2 tsp) maple syrup
1tspdijon mustard
1clovegarlicfinely minced
salt and pepperto taste
Instructions
To large bowl combine dressing ingredients and mixed until emulsified.
To the bowl add beans, red onions, and cherry tomatoes – toss until coated. Add in fresh herbs and toss to combine.
