These Balsamic Mushroom Tarts are flaky, savoury, and easy to make.. A flaky vegan crust loaded with balsamic mushrooms and vegan feta - perfect for breakfast or a dinnertime appetizer.

Ingredients
1tbspolive oil
2shallotssliced
300gmushroomssliced
2clovesgarlicminced
salt & pepperto taste
2tspfresh thyme leaves
1tbspbalsamic vinegar
300gpuff pastrypre-rolled sheets
½cupvegan feta cheese
Instructions
Preheat oven to 400°F and line a baking sheet with parchment paper or a silicone baking mat.
Heat a frying pan with olive oil over medium heat. Add sliced shallots and cook 2-3 minutes, until softened. Mix in the mushrooms and cook an addition 5 minutes or until the mushrooms have softened. Then the garlic, thyme, balsamic vinegar, salt, and pepper - cooking for an additional 5 minutes. Remove form the heat and set aside to cool.
Slice the pre-rolled puff pastry sheets into 8 even pieces then place on the prepared baking sheet.
Add some feta cheese to the centre of the puff pastry rectangles, leaving at least ½" of space around the edge.
Divide the mushroom mixture into 8 and add a mound of mushrooms to the centre of the puff pastry tarts, on top of the feta. Repeat for all tarts.
Bake tarts in pre-heated oven for about 20 minutes or until a deep golden brown.
