Made with store-bought vegan puff pastry and just a handful of ingredients, these vegan tarts come together in minimal time. When looking for a puff pasty, ensure it’s vegan friendly without any butter or animal-based lard.

Top tips for making Balsamic Mushroom Tarts:

  • Keep the puff pastry cool. This is what allows the puff pastry to bake into crispy, flaky layers. If the layers of fat between the dough get too warm it will melt before it has time to release air creating the layers.
  • Let the mushroom mixture cool. Adding a warm mushroom mixture can affect the temperature of the puff pastry and affect the rise. If making these for breakfast we recommend making the mushroom mixture the night before and storing in the fridge until your ready to make the tarts.
  • Bake until a deep golden brown. For the best flaky texture bake the tarts until the bottom is a deep golden brown and their is a nice rich colour on top.

Ingredient notes:

  • Mushrooms – Any mushrooms can be used in this recipe. In the past we’ve used cremini, white, oyster, shitake, or just a collection of mixed mushrooms.
  • Puff Pastry – Look for a strough-bought puff pastry that is vegan friendly. Ingredients to look out for our dairy; specifically butter, as well as any animal-based lard.
  • Vegan Feta – Pick your favourite brand; we’ve made this recipe with Daiya and Nafsika’s Garden.

Ingredients

  • 1 tbsp olive oil
  • 2 shallots, sliced
  • 300 g mushrooms, sliced
  • 2 cloves garlic, minced
  • salt & pepper, to taste
  • 2 tsp fresh thyme leaves
  • 1 tbsp balsamic vinegar
  • 300 g puff pastry, pre-rolled sheets
  • ½ cup vegan feta cheese

Instructions

  • Preheat oven to 400°F and line a baking sheet with parchment paper or a silicone baking mat.
  • Heat a frying pan with olive oil over medium heat. Add sliced shallots and cook 2-3 minutes, until softened. Mix in the mushrooms and cook an addition 5 minutes or until the mushrooms have softened. Then the garlic, thyme, balsamic vinegar, salt, and pepper – cooking for an additional 5 minutes. Remove form the heat and set aside to cool.
  • Slice the pre-rolled puff pastry sheets into 8 even pieces then place on the prepared baking sheet.
  • Add some feta cheese to the centre of the puff pastry rectangles, leaving at least ½" of space around the edge.
  • Divide the mushroom mixture into 8 and add a mound of mushrooms to the centre of the puff pastry tarts, on top of the feta. Repeat for all tarts.
  • Bake tarts in pre-heated oven for about 20 minutes or until a deep golden brown.
