They come together in a single bowl and cooked in the oven, it truly couldn’t be easier. The recipe is designed for minimal hands-on work so that you can prep your sides while they bake.

Top tips for making vegan meatballs:

  • Use beyond or impossible meat. We’ve used both of these brands for this recipe and found the best results because they’re the most similar to ground beef in texture.
  • Finely dice shallot and garlic. Unless you want big chunks of onion, we recommend dicing them very finely to add flavour but not too much bite.
  • Form the meatballs into two-bite size. For the most out of your ingredients, we like to form two-bite meatballs – but that doesn’t mean you can’t make them bigger if you want.
  • Use a cast iron skillet. For the best golden brown sear, we use a cast iron skillet in the oven.

Ingredient Notes:

  • Beyond Meat – Our go-to is the Beyond Meat product but this recipe can also be made with Impossible or any other brand that has a similar texture and moisture level to ground beef.
  • Nutritional Yeast – This adds a cheesy flavour, but can be swapped with a vegan Parmesan if preferred.
  • Chili Flakes – Just a pinch for the slightest hint of spice, but can be omitted if you’d prefer not to include.

Ingredients

Garlic Butter Meatballs

  • 1 pkg beyond meat
  • 1 shallot, diced
  • 4 cloves garlic, diced
  • ¼ cup nutritional yeast
  • ¼ cup breadcrumbs
  • ¼ cup parsley, roughly chopped
  • 1 tsp chili flakes
  • salt & pepper, to taste

Sauce:

  • ¼ cup vegan butter
  • ½ lemon, juiced
  • ¼ cup fresh parsley, chopped
  • 2 cloves garlic, minced
  • salt & pepper
  • pinch dried sage

Instructions

  • Preheat oven 400°F. Lightly oil a cast iron pan.
  • Add beyond beef, shallot, garlic nutritional yeast, breadcrumbs, parsley, chili flakes, salt, and pepper in a large bowl. Using your hands mix all the ingredients together until combined.
  • Gently form two-bite meatballs and place on the prepared cast iron pan leaving space between each.
  • Bake meatballs in the heated oven for 15 minutes.
  • While the meatballs bake, prepare the garlic butter sauce by adding vegan butter, lemon, parsley, garlic, salt, pepper, and sage to a small saucepan. Warm over medium heat until the butter has melted.
  • Remove the meatballs from the oven and flip. Spoon over the garlic butter sauce and place back in the oven to bake an additional 10 minutes.
  • Serve meatballs warm over rice, pasta, or on their own as an appetizer.
