Ingredients
Garlic Butter Meatballs
1pkgbeyond meat
1shallotdiced
4clovesgarlicdiced
¼cupnutritional yeast
¼cupbreadcrumbs
¼cupparsleyroughly chopped
1tspchili flakes
salt & pepperto taste
Sauce:
¼cupvegan butter
½lemonjuiced
¼cupfresh parsleychopped
2clovesgarlicminced
salt & pepper
pinchdried sage
Instructions
Preheat oven 400°F. Lightly oil a cast iron pan.
Add beyond beef, shallot, garlic nutritional yeast, breadcrumbs, parsley, chili flakes, salt, and pepper in a large bowl. Using your hands mix all the ingredients together until combined.
Gently form two-bite meatballs and place on the prepared cast iron pan leaving space between each.
Bake meatballs in the heated oven for 15 minutes.
While the meatballs bake, prepare the garlic butter sauce by adding vegan butter, lemon, parsley, garlic, salt, pepper, and sage to a small saucepan. Warm over medium heat until the butter has melted.
Remove the meatballs from the oven and flip. Spoon over the garlic butter sauce and place back in the oven to bake an additional 10 minutes.
Serve meatballs warm over rice, pasta, or on their own as an appetizer.
