Easy Vegan Mango Salsa
It’s summer and summer means having fresh and delicious foods. Think fresh fruits and vegetables, herbs and refreshing drinks! Summer is a food bloggers best friend. So many great produce options are in season, which means you can buy them locally and they taste A LOT better. It also means the days are longer and as food photographers we REALLY appreciate that. There is no food that better encompasses summer than our Mango Salsa. It’s packed full of fresh fruit and veg, herbs and is super refreshing. In the words of Joey Tribbiani “well that’s like summer in a bowl”.
A combination of fresh flavours makes this one of our go-to recipes for summer parties. A combination of mango, jalapeno, red pepper, tomatoes, cilantro, red onion and lime – can this dip get any better? We love this dip along with some tortilla chips and pita, as well as a condiment for tacos or atop a tofu steak.

- 1 mango
- 1 cup cherry tomatoes
- 1/4 large red onion
- 1/3 cup cilantro
- 1/2 red bell pepper
- 1 jalapeno
- 1 tbsp lime zest
- 1 lime juiced
- With a sharp knife finely dice all your mango, cherry tomatoes, red onion, cilantro and red bell pepper. We prefer fairly small pieces as it makes it more scoopable. Add all your chopped ingredients to a medium bowl.
- Slice your jalapeno in half and remove the insides and seeds. If you wish you can leave some in for a spicier dip. Finely dice the jalapeno and add to your bowl.
- Add lime zest and juice and mix until well coated.
- Serve with tortilla chips.
