This Salami Pesto Sandwich is inspired by Kat’s favourite sandwich from her childhood.
You know those foods that you used to get so excited about when your parents made it for dinner? This is one of those recipes for Kat. There were a handful of meals that Kat would get excited about. Homemade pizza, lasagna and this one. It’s simple, but it’s delicious. The combination of the salty salami with a fresh pesto is absolutely wonderful. So let’s veganize a Salami Pesto Sandwich.
Why this Vegan Salami Pesto Sandwich is the best weekday dinner:
- Bread that’s pillow-y on the inside and crunchy on the outside.
- Comes together in about 20 minutes.
- Absolutely delicious!
- Can easily be doubled or tripled for more people.
Start off with the bread, one of it, if not, the most important aspect of this sandwich. Luckily most bread is vegan, but there are some that are not. Look for ones without any egg or milk ingredients and you should be okay. You want a super crusty bread that’s not too thick. Too much bread will make it difficult to eat.
Salami is a little more difficult to replace. Depending on where you live you’ll be able to find a good replacement in grocery stores. We LOVE the Yves brand for deli meat like this, and their salami is very good. If you can’t find something like this, you can make one. It’s a lot more work but there are a number of delicious vegan deli meat seitan recipes out there.
Did you know pesto isn’t vegan? Well most of them aren’t. Traditional pesto often has Parmesan cheese in it. When looking to replace look for a pesto without dairy in it or make your own. Pesto is one of the easiest sauces to make. You could even make our arugula pesto from our Pesto Pasta Salad.
Finally cheese. Everyone’s favourite thing to say is the hardest to replace with a vegan option, but it’s actually one of the easiest components in this sandwich to replace. There are delicious dairy-free and plant-based options out there. Companies like Daiya, Earth Island and Chao all have great options for vegan cheese slices.

Kat's Favourite Vegan Salami Pesto Sandwich
Ingredients
- 200 g baguette
- 141 g vegan salami, diced
- 75 g vegan pesto
- 100 g vegan cheese slices*
- 30 g arugula
- 100 g tomato, sliced*
Instructions
- Preheat oven to 350F.
- Spread pesto on both sides of baguette and top with cheese slices. Bake in oven for 5 minutes.
- Top with diced salami and bake for another 5 minutes.
- Place slices of tomato across sandwich and bake for a final 2-3 minutes.
- Top with arugula and slice into four even sandwiches.
