Whenever we’re in a breakfast rut, chia pudding is our go-to recipe. It’s easy to make and is easily customizable to whatever flavour you enjoy. It’s a simple overnight meal you can make in about 30 seconds with just a handful of ingredients, plus it’s healthy and delicious. We’re sharing 3 easy ways to make a flavourful and delicious Vegan Chia Pudding: Chai Latte, Birthday Cake, and Neopolitan.

What is chia pudding?

Chia pudding can be made with just two ingredients; chia seeds and a liquid (most commonly non-dairy milk). Just combine the two ingredients and let it sit for 30-60 minutes or until thickened. The flavour is entirely up to you – before it thickens just add whatever flavours you want. We like to add fruit, spices, sweeteners, or toasted coconut. Plus the best part: it’s got a ton of nutritional value. Chia pudding is high in protein, omega-3s, and fibre –helping keep you full and satisfied right to lunch.

Top tips for making chia pudding:

  • Use your favourite non-dairy milk. The non-dairy milk you choose will be a big part of the flavour profile of your pudding. We like to use soy milk, but you could also use oat milk, rice milk, almond milk, or whatever non-dairy milk you want.
  • Mix it twice. Chia seeds tend to fall to the bottom of the glass, so we like to mix it once and let it sit for 10 minutes, then mix it again before letting it rest for at least 30 minutes. This ensures that you don’t get clumps of chia seeds anywhere.
  • Make a big batch for meal prep. Chia Pudding holds up fairly well over a few days, so making a big batch is a great way to have a healthy breakfast ready for you in the fridge each morning.

Chia seeds are edible seeds of the Salvia hispanica plant, which is in the mind family, native to central and southern Mexico. They’re a great source of energy, vitamins, and antioxidants. Because of their high soluble fibre, chia seeds can absorb 10 times their weight in liquid, becoming gel-like and creating a delicious pudding-like consistency.

Ingredients

  • 60 g (4 tbsp) chia seeds
  • 240 mL (1 cup) non-dairy milk
  • 2 bags chai tea
  • 5 mL (1 tsp) vanilla extract
  • 10 mL (2 tsp) maple syrup
  • cinnamon/nutmeg, for topping
  • whipped cream, for topping

Instructions

  • Heat the milk just a tad (just warm to the touch) in the microwave and place tea bags in it. Allow it to steep until the milk comes to room temperature again.
  • Combine all ingredients (except cinnamon/nutmeg and whipped cream) with the chai milk and allow to set in the fridge. You may want to mix it up again after 10 minutes to avoid chia seeds falling to the bottom. Let set in the fridge at least 45-60 minutes.
  • To serve top with whipped cream and a sprinkle of cinnamon or nutmeg.

  • 30 g (2 tbsp) chia seeds
  • 120 mL (½ cup) non-dairy milk
  • mL (½ tsp) vanilla extract

Chocolate Layer

  • 30 g (2 tbsp) chia seeds

Strawberry Layer

  • 30 g (2 tbsp) chia seeds
  • 120 mL (½ cup) non-dairy milk
  • 2-3 strawberries
  • 5 mL (1 tsp) maple syrup
  • pinch salt

Instructions

To make vanilla layer:

  • Mix all ingredients in a bowl or mason jar and place in the fridge to set. You may want to mix it up again after 10 minutes to avoid chia seeds falling to the bottom. Let set in the fridge at least 45-60 minutes.

To make chocolate layer:

  • Mix all ingredients in a bowl or mason jar and place in the fridge to set. You may want to mix it up again after 10 minutes to avoid chia seeds falling to the bottom. Let set in the fridge at least 45-60 minutes.

To make strawberry layer:

  • To a blender or food processor add non-dairy milk and strawberries. Blend until smooth. You can add more strawberries if you want a more intense strawberry flavour.
  • Mix the strawberry milk with the remaining ingredients and place in the fridge to set. You may want to mix it up again after 10 minutes to avoid chia seeds falling to the bottom. Let set in the fridge at least 45-60 minutes.

To make neopolitan chia pudding:

  • Once the chia puddings have thickened layer each flavour into another jar making the neopolitan flavour.
